Recipe Details:

Sindhi Biryani is a traditional Pakistani dish that originates from the Sindh region. Sindhi Biryani is distinct for its bold, tangy, and aromatic flavors, characterized by a rich use of spices, dried plums, and yogurt, which give it a unique taste compared to other types of biryani.

Ingredients:

For the Rice:

  • 3 cups basmati rice (soaked for 30 minutes)
  • 6 cups water
  • 2 bay leaves
  • 4-5 cloves
  • 2-3 green cardamom pods
  • 1 cinnamon stick
  • 1 tsp salt

For the Meat and Masala:

  • 1 kg chicken or mutton (cut into pieces)
  • 3 large onions (thinly sliced)
  • 3 large tomatoes (chopped)
  • 2-3 medium potatoes (peeled and halved)
  • 1 cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 3-4 green chilies (slit)
  • 1/2 cup fresh coriander leaves (chopped)
  • 1/2 cup fresh mint leaves (chopped)
  • 1/2 cup cooking oil or ghee
  • 1/2 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tsp black pepper powder
  • 2-3 dried plums (aloo bukhara)
  • 1 tsp salt (adjust to taste)

For Assembly:

  • 1/4 cup milk (warmed)
  • A pinch of saffron or 1/4 tsp yellow food color
  • 2 tbsp ghee or butter

Instructions:

  1. Prepare the Rice:
  1. Cook for twenty to twenty-five minutes on low heat (dum).
  1. Cook the Masala:
  1. Heat oil or ghee in a large pot. Fry onions until golden brown. Remove half for layering later.
  2. After adding the ginger-garlic paste to the pot, add the chicken or mutton and cook until the meat turns a different color.
  3. Add yogurt, tomatoes, green chilies, and spices (turmeric, red chili, cumin, coriander, black pepper, and garam masala).
  4. Add potatoes and dried plums. Cook until the meat is done and the potatoes are soft.
  1. Layer the Biryani:
  1. Place half of the rice in the bottom of a big pot. Evenly distribute the masala and meat on top.
  2. Add the remaining rice on top. Drizzle with saffron milk and ghee.
  3. Cover the pot with a tight lid. 
  1. Serve:

Fluff the rice gently before serving. Pair with raita, salad, and pickles for an authentic Sindhi experience.
